Bank Holiday BBQs Easy Chicken Satay

Perfect for bank holiday BBQs, this chicken satay recipe is quick, easy and tastes fabulous. As an added bonus, the sauce ingredients are all long-lasting store-cupboard items, so it’s a great standby as an impressive midweek meal when you have unexpected guests!

Ingredients

Serves 4-5

4 chicken breasts

Satay sauce
2 cloves of garlic
4 heaped tbsp peanut butter
3 tbsp mango chutney
2 tsp curry paste
2 tsp soy sauce
1 tsp lime juice
150ml chicken stock

Method

Satay Sauce
In a food processor, blend all of the satay sauce ingredients apart from the chicken stock. Once well blended, splash in a little of the stock and blend again. Repeat until the sauce is a smooth consistency (you want to be able to marinate the chicken, but not have the sauce too runny).

Chicken Skewers
Dice the chicken breasts into cubes and place in a dish. Cover with the satay sauce. Stir and leave to marinate for at least 30 minutes. Once marinated, thread the chicken cubes onto wooden skewers. Grill or BBQ on a high heat for 15 minutes, turning the skewers at regular intervals. Put the remaining satay sauce into a small saucepan and heat through for 5 minutes. Serve as extra dipping sauce.

Serve the satay skewers with a crispy green salad (little gem lettuces are ideal) and rice or noodles.
