Chef Film recipe: Scarlett’s Pasta Aglio e Olio

If you are a ‘foodie’ and you haven’t seen the film Chef you need to get up now and go see it immediately. If you are a ‘foodie’ and have already had the pleasure of seeing the film Chef, then you know what we’re talking about.

However, do not, under any circumstance go when you’re hungry. You will come out salivating like a dog and run to the nearest food outlet, which may, or may not, be a disappointment after seeing the film!

Alongside a brilliantly understated, heartwarming and feel good story, so much incredible, drool-inducing food is prepared and eaten throughout the film. All of which was developed by Chef Roy Choi who pioneered the food truck craze in LA with his amazingly popular Kogi Korean taco truck.

From the lovingly created fried cheese sandwich to all the slow cooked meats that fall apart to the signature Mojo Pork Cubanos, you will want it all. Believe us.

But the one dish that stood out for us was one of the simplest. The amazing plate of pasta that Casper (Jon Favreau) serves to Molly (Scarlett Johanson). Pasta aglio e olio. After he creates his simple masterpiece and hands it to Molly, her eyes close and a sensual ‘mmm’ type moan ensues. It’s food porn.

So, after making it ourselves and feeling the exact same elation, we just had to share the recipe with you! This is the exact recipe that Chef Roy Choi made for the film, which he apparently calls “transcendence through a handful of humble ingredients”

Enjoy…

INGREDIENTS
450g dried spaghetti
230ml good quality extra virgin olive oil
12 large garlic cloves cut into thin slivers
100g fresh parsley
65g parmesan cheese, freshly grated
1/2 tsp crushed red pepper flakes
2 lemons
Salt & pepper to taste

METHOD
Bring a large pot of salted water to boil and add the spaghetti, cooking until al dente, 8-10 minutes. Drain.

Heat olive oil in a large pan over medium heat. Add garlic and stir frequently until the garlic is golden brown. Add red pepper flakes, salt and pepper.

Add the drained spaghetti directly to the pan. Toss until spaghetti is thoroughly coated with the garlic oil.

Remove pan from heat, add the parsley and Parmesan and toss well. Check for flavour and adjust the salt if necessary. Squeeze lemons to taste.

Garnish with more Parmesan, serve in a big bowl and enjoy!
