Lazy Brunch Blueberry Pancakes Recipe

Long, lazy weekend mornings under the duvet with a pile of magazines and a huge mug of coffee – our idea of bliss! Mornings like these deserve an easy brunch recipe for when you do finally drag yourself out of that cosy cocoon.

So try our easy blueberry pancakes – light, fluffy, American-style bites of pure, indulgent pleasure. The self-raising element makes them more forgiving than traditional pancakes (for which we find the first few inevitably end up smooshed at the edge of the frying pan!).

So with Pancake Day just around the corner (4 March), get some practice in with this straightforward recipe.

We’ve made ours with blueberries and topped with maple syrup, but feel free to add the topping of your choice – banana, strawberries, chocolate spread, even bacon – whatever takes your fancy! And for a truly lazy version, hand this recipe over to your partner, and get them to do the work for you!

Makes 8-10 pancakes

Ingredients

200g self-raising flour
1 tsp baking powder
½ tsp salt
1 egg (medium size)
300ml semi-skimmed milk
Knob of butter (plus butter for cooking)
1 pack blueberries

You Need

Mixing bowl, jug, frying pan, whisk

Method

In a large bowl, mix together the self-raising flour, baking powder and salt. In a jug, beat the egg into the milk

Make a small well in the flour mixture and then gradually whisk in the beaten egg and milk mixture until you have a smooth batter

Melt a knob of butter in the frying pan and whisk into the batter. Then slowly stir in about two-thirds of the blueberries (keep some back for topping)

Now you’re ready to cook your pancakes! Heat up a small amount of butter to coat the frying pan. Ladle a large spoonful of batter into the pan – you should be able to fit 3-4 pancakes into your pan. Cook over a medium heat for 3-4 mins, turning them over when small bubbles appear in the batter surface. Cook for another 2 mins until both sides are golden-brown.

Cover to keep warm until all the pancakes are cooked

Now you’re ready to add your toppings, tuck in and enjoy!
