As May 17th approaches, we at Average Janes are teaming up with Stork to Bake Ourselves Happy on World Baking Day!

In todays hectic, modern life the need to find some calm can sometimes be a tad overwhelming! According to psychological therapist, Emma Kenny, the physical aspect of baking has been found to help decrease stress as it offers us an opportunity to be mindful, creative and focus our energy on something fun which helps us to zone out of our everyday anxieties.

So with all that in mind, along with the happy thoughts that wash over us at the thought of a sweet treat for our friends and family, we will be joining in with World Baking Day with our own special bake, dedicated to someone extra special!

We’ve taken some inspiration from the Stork recipes and we’ll be making simple, but always incredible, chocolate brownies! We will also be dedicating our bake to our mums! The ones that were by our side when we were making our very first fairy cakes, who showed us how to sieve flour without getting it all over ourselves and the ones who had freshly baked cakes or biscuits ready for us when we came home from school!

This will be our recipe…

For Chocolate Chip Brownies
YOU WILL NEED

115g (4oz) plain chocolate
55g (2oz) Stork tub
3 medium eggs
225g (8oz) castor sugar
1 tsp vanilla extract
40g (1½oz) plain flour
25g (1-oz) cocoa powder
1 tsp baking powder
55g (2-oz) set natural yoghurt
85g (3 oz) chocolate chips

METHOD
1.Break the chocolate into a bowl, add the Stork and melt over a pan of hot water (or in a microwave on medium power).
2.In a large bowl, whisk the eggs with the sugar and vanilla until creamy and slightly thickened.
3.Sieve the dry ingredients and add to the eggs with the chocolate mixture, yoghurt and chocolate chips. Mix gently.
4.Pour into a greased 22cm (9 inch) square tin.
5.Bake in a preheated oven at 170°C, 160°C fan oven, gas mark 4 for 45-50 minutes.
6.Leave to cool before cutting into squares.
