Everybody loves a cupcake! These quick, classic cupcakes are little bites of heaven! So why not allow just a little sweetness this January…
You will need
Your fan oven at 170 degrees, scales, wooden spoon, big bowl, 24 cupcake cases and a cupcake tray.
Ingredients
Cupcakes:
225g unsalted butter
225g caster sugar
225g self raising flour
4 eggs well beaten
1 tsp vanilla essence
1 tsp baking powder
Butter Icing:
250g butter, softened
1 tsp vanilla essence
600g icing sugar
Method
Beat softened butter and sieved caster sugar.
Add well whisked eggs and sieved self-raising flour.
Add baking powder and vanilla essence and mix well.
Spoon ingredients evenly into cases (about half full).
Cook for 15-20 minutes and check, until cakes are springy to touch.
Cool on a wire rack.
To make butter icing
Beat softened butter with vanilla essence and add the icing sugar gradually.
Ensure cakes are completely cooled before icing them.
Extras
Use up that Christmas Baileys? Add a dash of Baileys and swap 50g of self raising flour for 50g of cocoa powder for some scrumptious chocolate treats.
Add some colour with a few drops of food colouring in your butter icing.
Top them off with tantalising treats like dolly mixture, wafer daisies, Maltesers, nuts, sprinkles, penny sweets etc
