How to make your own Granola: Coconut and Raisin

We are still very much hanging on to summer and trying out best to eat healthily. Try this delicious and really easy Coconut and Raisin Granola, perfect with Almond Milk for a tasty breakfast or topped with yoghurt and fruit for an after dinner snack.

The great thing with Granola is it will keep, so you can make a large batch and keep it in a seal-able glass jar. To make one large jar you will need:

  • Almonds (1 cup)
  • Jumbo Oats (1 and ½ half cup)
  • Good quality Maple Syrup (1/3 cup)
  • Coconut Oil (2 tbsps)
  • Ground Cinnamon (2 tbsps)
  • Flaked coconut (½ cup)
  • Raisins (½ cup)

Coconut and Raisin Granola Method

First you’re gonna need to preheat the oven to 180°c. Next place the almonds into a food processor and pulse until ground, they don’t need to be smooth but you want them to be fairly broken up. Once you have the right consistency, place them in a large mixing bowl.

Next up, you need to add the rest of the dry ingredients to the bowl. So add the jumbo oats, flaked coconut and raisins. At this point you can add any other dried fruits or nuts that take your fancy or remove the coconut and raisins for a plain granola recipe if that takes your fancy!

In a saucepan mix together the coconut oil, maple syrup and ground cinnamon on a low heat until melted. The purpose of this step is to simply melt the wet ingredients together so make sure the heat is not up too high. You don’t want to be seeing any bubbles!

Pour the wet mixture into the large bowl and mix all the ingredients together until the oats are evenly covered. Place the mixture flat on to a baking tray (with greaseproof paper is our suggestion). It needs to go into the oven for 20-30 minutes, check regularly and move around half way through. Once the granola looks brown and golden take out of the oven and leave to cool.

This granola can be easily adapted to your tastebuds, add in sunflower seeds for extra crunch or dried apricots for a fruitier flavour. It is a great healthy alternative to shop-bought granola which is typically packed full of sugar. You have to give this Coconut and Raisin granola a go!
