Busy Girl Bakes: Rocky Road

Indulgent dark chocolate, melt-in-the-mouth marshmallow and a bit of stress-relief biscuit-bashing – what’s not to love about Rocky Road?

This is the ultimate busy girl bake – just melt, bash, stir and pour. So whether you’ve got friends coming over, need a sweetener for office colleagues, or just have a craving for comfort treats, this easy recipe is will hit the spot every time.

Makes up to 24 squares – depending on how small you can bear to cut them!

Ingredients

300g good quality dark or milk chocolate
130g unsalted butter
2tbsp golden syrup
150g rich tea or digestive biscuits
1 pack of marshmallows

Method

In a large saucepan melt the butter, chocolate and syrup.

Put the biscuits into a sealable freezer bag and break into pieces with a rolling pin (our favourite bit, recommended for a bit of stress-relief after a tough day!)

Stir the biscuits and marshmallows into the melted chocolate mixture

Pour into a square or rectangular tin – approx. 9” square is ideal

Refrigerate for at least 2 hours, overnight is best if you have time.

And voila! Sit back and enjoy a divine treat that took less than half an hour to create! Your friends will love you for it! If you haven’t eaten the whole tray before they come round.
