Apple and Cinnamon Cake recipe
With The Great British Bake Off back on our screens, we’re feeling inspired to do a bit of baking ourselves! This easy recipe is the perfect way to kick off Autumn!
So embrace autumnal flavours with this scrumptious apple and cinnamon cake from the Cake Guru herself, Mary Berry. Although this one takes a while in the oven, the prep only takes 20 minutes – simply a case of chopping, grating, beating and pouring. And it looks very impressive when it’s done!
225g (8oz) soft butter
225g (8oz) light muscovado sugar
3 large eggs
100g (4oz) walnut pieces, chopped
100g (4oz) sultanas
225g (4oz) self-raising flour
2 tsp baking powder
400g (14oz – about 2 large apples) cooking apples, peeled, cored and grated
1 tsp ground cinnamon
Light muscovado sugar for sprinkling
Extra chopped walnuts for sprinkling
Icing sugar for dusting
Pre-heat the oven to Gas 4/180C. Grease a 9 in deep round cake tin. Line the tin base with greaseproof paper.
Measure the butter, sugar, eggs chopped walnuts (remember to save a few for the end), sultanas, flour and baking powder into a large bowl. Beat together until thoroughly mixed.
Spoon half the mixture into a cake tin and flatten with a spatula. Spread the grated apple and the cinnamon over the top.
Spoon the remaining cake mix on top and level with a spatula. Sprinkle the surface with a small amount of light muscovado sugar and the remaining chopped walnuts.
Bake in the pre-heated oven for 1hour 15mins – 1 hour 30 until the cake is well risen and golden brown on top. Leave to cool in the tin for a few minutes. Then turn out onto a cooling tray, remembering to peel off the parchment from the base.
Once cool, dust with icing sugar and enjoy!
